Gin tonic cheesecake – savršeni ljetni desert

Nakon mekanog japanskog cheesecakea, božićnog cheesecakea, ljubičastog cheesecakea, spoja cheesecakea, bundeve i karamele te idealnog spoja cheesecakea i badema ova svima omiljena torta može nastati u ovoj finoj varijanti.

Donosimo jednostavan i brz recept za cheesecake s ovim tekućim dodatkom koji će ga pretvoriti u najbolju ljetnu tortu!

Recipe 1 cup GF rolled oats 1/4 cup shredded coconut 3/4 cup almonds 1/4 cup coconut oil 3 tbsp rice malt syrup Filling 3/4 cup fresh lime juice 1 1/2 cup full fat coconut milk 2 tbsp cornstarch 2 tsp agar-agar 1/2 cup rice malt syrup 1 tsp vanilla bean extract 1/2 tsp matcha powder (optional) Preheat over to 180C. Grease a 8-inch pan with coconut oil. In a food processor, add almond and shredded coconut and oats. Process until finely ground. All rice malt syrup and coconut oil until dough just becomes to form a ball. Firmly press the mixture into the bottom and sides of the tart tin. Bake for 20 minutes or until it turns golden brown. Let cool completely. Filling In a saucepan, combine the lime juice, rice syrup, cornstarch, vanilla. Cook on a medium-high heat, with constant stirring, until thickened. Add coconut milk, agar-agar, matcha if using and mix until completely dissolved. GIN TONIC GHEESECAKE

Sastojci (za kalup promjera 22-24 cm):
TIJESTO

200 g keksa (najbolje ispadne sa Digestive keksima)
75 g amaretto keksa
90 g maslacac

Priprema:

Kekse usitnite i pomiješajte, maslac otopite. Odvojite 3-4 žlice usitnjenih keksa za dekoraciju; a ostatak pomiješajte s maslacem i utisnite u dno kalupa za tortu – prethodno obloženog papirom za pečenje. Stavite u hladnjak da se stisne.

KREMA

375 g sirnog namaza
200 g milerama
400 g slatkog vrhnja
10 g želatine u prahu
100 g šećera u prahu
110 ml gin-tonica

Priprema:

Otopite želatinu u par žlica hladne vode. Zagrijte 200 g slatkog vrhnja i kad provrije otopite nabubrenu želatinu u njemu. Miksajte sirni namaz, mileram i šećer dok ne postanu pjenasti. Dodajte gin-tonic. Mikserom izmiješajte sve sastojke u jednoličnu smjesu i ravnomjerno nanesite na tijesto.

Posebno istucite preostalih 200 g slatkog vrhnja u šlag te ga pažljivo špatulom nanesite kao zadnji sloj. Stavite u hladnjak na pola sata do sat i servirajte tortu ukrašenu s kriškama limete.
